Fun Cupcakes!

Who doesn’t love cupcakes especially when they are full of colour and prettiness! Jade (AllThingsJadex) and I decided to make some cupcakes together and after scrolling through the Internet we found a fun recipe by Cupcake Jemma who bakes unique and fun cakes and deserts, I have always loved her videos and I thought that this would be the perfect time to try one of them out! 

What you will need: 


125g unsalted butter 

125g caster sugar

125g self raising flour 

1/4 tsp bicarbonate of soda 

2 large eggs

1 1/2 tbsp whole milk

20g Sprinkles 

1/4 tsp vanilla extract


150g unsalted butter

335g icing sugar 

1/4 tsp vanilla extract 


Sift the flour, sugar and the bicarbonate of soda in a bowl, then add the butter and eggs and mix it all together. When mixed, add the whole milk and the vanilla extract into the bowl and mix for about 30 seconds. To add the fun to the cupcakes add the sprinkles into the mix and stir them in. 

Place 12 cupcakes cases in to a cupcake tin and use two table spoons to spoon some of the mixture onto each of the cases. 

Bake in the oven 170 degrees for around 22 minutes or until they are springy to touch. 

After five minutes take the cupcakes out of the tin and place on a wire rack to cool, whilst this is happening it’s time to make the buttercream! 

Whip the butter until it’s light and fluffy, then add the sugar and the vanilla extract. If this is too thick then add a touch of milk. 

Grab your piping bag, turn the top bit over and spoon in the cream. Time to ice the cupcakes by piping a good portion of the cream on top. Then either push the cake into the sprinkles or sprinkle some on top! 

Now it’s time to eat and enjoy!
